Brown Sugar and Chili Smoked Brisket

 



 

• 8-10 pounds beef brisket
• For Rub:
• 1/3 cup brown sugar
• 1/3 cup paprika
• 1/3 cup chili powder
• 1/3 cup salt
• 1/3 cup ground black pepper

Preheat smoker & bring wood chips. Clean and dry the brisket. Apply brisket rub evenly. Put brisket in smoker for 8-10 hrs. Keep the smoker temperature at more or less 220°.
To addition tenderness, take up the brisket out of the smoker, Binding with aluminum foil and put in oven at 180-200° for the last 2 hrs. Typically after 8-10 hrs each of meat will have absorbed as much smoke as it can & another smoking could impart a bitter flavor. Let brisket to sit for 20-30 mins. Slice brisket against the grain.
