Baked Beef Brisket

4 pounds boneless beef brisket
2 teaspoonfuls salt
1/2 teaspoonful ground pepper
1 clove garlic, minced
2 big onions, thickly sliced
3 tablespoonfuls cornstarch

Place beef brisket, fat side up, in 13 x 10-inch shallow roasting cooking pan. Sprinkle brisket equally with salt, pepper and garlic. Top with onion.2. Bake in 350ºF. oven 60 minutes, or till onions turn brown. Add 1 cupful hot water and cover pan tightly with aluminum foil. Lessening oven temperature to 300ºF and keep cooking 2 hours or until brisket is tender.
Move out brisket and onions to warm platter. Skim fat from juices or use a gravy separator. To make gravy, mix 1 cup water and cornstarch. Add to juices in pan. Cook over medium heat, stirring perpetually, until gravy boils and thickens. Carve brisket across the grain into thin slices. Dish out brisket and onions with gravy.
