Bacon and Onion Stuffed Brisket

1 beef brisket (8-10 pounds)
2 cloves garlic, crushed
3 tblspn brown sugar
1 white onion, sliced
1 tblspn kosher salt
1/2 tblspn black pepper, ground
2 tspn paprika
1-2 bamboo skewers, presoaked

Slice into thick side of brisket creating a pocket about 5 inches long. Stuff with bacon,onion & minced garlic. Close pocket with bamboo skewers. Mix brown sugar, salt, black pepper and paprika & rub onto brisket.
Prepare smoker. You'll want the brisket to smoke for about 8-10 hrs at 180-200°. Put on smoker & cook till the temperature attains 185°. Take out brisket from smoker and wrap tightly in aluminum foil. Allow for 20-30 mins for slicing.

Bacon stuffed brisket is a simple recipe. Just don't forget to properly seal it with pre-soaked bamboo skewers
