Moroccan Beef Brisket

 

Moroccan Beef Brisket

 



 

1 large red onion, sliced
2 pound boneless beef brisket
2 parsnips, chopped
Salt & freshly ground black pepper
2 teasp ground coriander
1/2 teasp garlic powder
2 teasp ground cumin
1/2 teasp ground cinnamon
Pinch nutmeg
1 cup dry red wine
1 cup whole dried apricots
1/2 cup reduced-sodium beef broth
2 tablesp honey
1 cup couscous
1/4 cup chopped fresh cilantro leaves

Arrange onion wedges & parsnips in bottom of slow cooker. Season beef with salt & black pepper. Mix coriander,cinnamon, cumin, garlic powder, & nutmeg. Rub spice mixture all over beef. Arrange beef over onions & parsnips in slow cooker. Add apricots around beef. Whisk together wine, broth & honey in a small bowl. Pour mixture over beef. Cover & cook on LOW for six to eight hrs. Cook couscous according to package directions. Arrange beef, vegetables & apricots over couscous. Pour sauce from slow cooker & top with cilantro. Serve Moroccan Beef Brisket. Good Luck!
