Hot and Spicy Smoked Brisket

8 to 10 pounds beef brisket
For Rub:
1/2 cup paprika
1/4 cup brown sugar
1/4 cup black pepper
3 tablesp. chili powder
3 tablesp. salt
2 tablesp. garlic powder
1 tablesp. cayenne
2 tablesp. onion powder

Preheat smoker then add wood chips of your choice. Clean the brisket and then dry. Mix rub ingredients & apply onto brisket. Remove brisket to smoker for about 8-10 hrs. Maintain a temperature between 210-225°.
To increase tenderness, Remove brisket from the smoker, wrap in aluminum foil & place in oven at 180-200° F for the last two hrs. Typically after 8-10 hrs a piece of meat will have absorbed as much smoke as it can & additional smoking may impart a bitter flavor. Take off brisket & allow to sit for about 20 mins. Slice & serve Hot & Spicy Smoked Brisket.
